Ingredients

    ~MUFFIN BATTER:
    * 3/4 cup Natural Wheat bran, crude
    * 3/4 cup Milk, 1%
    * 1 cup Flour, white (all-purpose)
    * 1/2 cup Flour, whole wheat
    * 1 1/2 tsp. Baking Powder
    * 1 1/2 tsp. Cinnamon, ground
    * 3/4 tsp. Salt
    * 1/4 tsp. Baking Soda
    * 1/4 tsp. Nutmeg, ground
    * 3/4 cup Brown Sugar, unpacked
    * 1/3 cup Canola Oil
    * 1 Egg
    * 1 1/2 cups Apples [such as Cortland, Crispin, Jonagold, Golden Delicious, Idared, Northern Spy, or Spartan], chopped and peeled
    * 1/2 cup dried Cranberries, sweetened (craisins)

    ~TOPPING:
    * 2 tsp. Granulated Sugar
    * 1/4 tsp. Cinnamon, ground

Directions

1. In large bowl, combine bran and milk; let rest 5 minutes.
2. In medium bowl, combine flour, baking powder, cinnamon, salt, soda, and nutmeg.
3. Stir brown sugar, oil, and egg into bran mixture. Stir in dry ingredients just until combined. Stir in apples and dried cranberries.
4. Stir batter into greased muffin cups. [Makes 8 large 'jumbo' muffins, or 16 smaller 'regular' sized muffins. Can also make 6 'jumbo' and 4 'regular', depending on your pans!] For topping, combine granulated sugar and cinnamon; sprinkle over muffins.
5. Bake in a 400 F oven for about 18 minutes, or until tester comes out clean.
6. Remove from oven, and cool on wire racks. Makes 8 large 'jumbo' muffins [1 'serving' each], or 16 smaller 'regular' muffins [0.5 'serving' each]. Enjoy! :)
