Ingredients

Cod (fish) - 24 oz / 1.5lbs
Curry powder - 2 tbsp
Garam Masala - 1 tbsp
black pepper, cracked or ground, 1 tsp
Lite Coconut Milk -1.5 cup/ or 14oz can
College Inn Chicken Broth, Lite & Fat Free - 1 cup
Long grain white rice, uncooked - 1.5 cup
Mixed Vegetables, frozen or freshly diced - 3 cup
Kosher Salt - 2 tsp
Onions, chopped - 1/2 cup
Garlic - 2 cloves
Canola Oil - 1 tbsp
Directions
- place oil, onions and garlic in a saute pan and cook till soft on medium.
- add garam masala and curry powder and cook on low for about 8 minutes.
- add chicken broth/stock and let simmer on medium for 5-10minutes until it is reduced by a third. Add salt and pepper to taste
- add coconut milk and bring to boil on medium then add fish and reduce flame to medium low and poach in sauce. spoon sauce over top as you go along. Cook for 10mins
- At the same time, cook rice to package instructions but add veggies right before you turn the flame down.
