Introduction

Just veggies & broth - no dairy to make this a creamy soup! Mmmmmm! Just veggies & broth - no dairy to make this a creamy soup! Mmmmmm!
Number of Servings: 4

Ingredients

    1 med. zucchini (approx. 3 cups sliced)
    1 med. summer squash (approx. 3 cups sliced)
    1 cup water
    3 beef boullion cubes
    2 Tbsp. butter

Directions

Wash & slice veggies.
(NOTE: You can use all zucchini if no summer squash avaiable.)
Cook in saucepan over medium heat with boullion & water until soft and tender. Stir in butter until melted. Puree in food processor or blender and serve.
