Ingredients

    1 cup dry qunoa, rinsed
    10 large shrimp, raw, deveined, peeled
    4 Tbsn Buitoni Basil Pesto (or pesto of your choosing)

Directions

1. Rinse quinoa and combine with 1 1/2 cups of water; bring to a boil. Once boiling reduce heat to simmer for 15 minutes

2. While quinoa is cooked, if shrimp is frozen, thaw then peel. Cut into bite size pieces.

3. After quinoa has cooked for 15 minutes remove from heat and let sit 5 minutes to absorb all water.

4. Once done, combine all ingredients at once or divide into individual servings.

Serving Size: Makes 2 large servings or 4 smaller servings
