Ingredients

    1 4oz. Tilapia Fillet
    1/2 cup snap beans
    1/2 cup carrots
    2 plum tomatoes, chopped
    4 spanish olives with pimento, sliced
    1/2 cup sweet red pepper, chopped
    2 slices red onion, thin
    1/2 tablespoon olive oil
    1 teaspoon lemon juice
    1 tsp fresh chopped oregano
    Salt and garlic pepper to taste

Directions

trim and snap beans into 1 inch pieces. Combine with carrots tomatoes, olives and pepper. Add olive oil, lemon juice, oregano, salt and garlic pepper. Stir to mix.

Layer 2-20 inch pieces of aluminum foil and spray generously with cooking spray. place onion on middle of foil and then fish on top of that. Put vegetables on top of fish and seal packet. Remember to leave space in foil packet to allow for steam to cook the fish. Place on grill(preheated to medium high) for 5 minutes. Check for doneness. Fish should flake easily.
