Introduction

I experimented with a few of the items I'm 'allowed', and came up with this gem. It satisfied my mid-afternoon craving for a baked item. You could also cook apples and then puree to use instead of the strawberries. Blueberries would also work. The sour light cream replaces the fat (as would yoghurt) and an egg is not necessary. Ingredients

    *psyllium husks, 4 tbsp (remove)
    Herbalife Protein Powder, 4 tbsp (remove)
    Flaxseed, .25 cup (remove)
    Strawberries, fresh, .25 cup, pureed (remove)
    Sour Cream, reduced fat, .25 cup (remove)
    Almonds, 0.5 cup, ground (remove)
    Baking Soda, 1 tsp (remove)

Directions

Mix dry ingredients well with pureed strawberries and sour light cream.

Bake at 180C for 20 mins in silicone muffin pans (no oil or paper required)
