Ingredients

Unsalted Butter, 1/4 cup, melted
Graham Cracker Crumbs, 2 cups
Light Cream Cheese, 3 (8 oz) packages, softened
Egg Substitute, 1 cup
Granulated Sugar, 1cup
Lemon Juice, 1 tsp
Lemon Peel, 1 tsp
Cherry Pie Filling, 21 oz Can
Directions
Makes 12 servings
Prepare 9" springform pan
Heat oven to 350 degrees. Combine butter and graham cracker crumbs, press into bottom and up sides of pan. Bake 7 min. Turn oven down to 300 degrees.
Combine cheese, sugar, lemon juice, lemon peel, and beat until smooth and creamy. Add egg substitute 1/4 cup at a time, beating to combine after each addition. Pour into prepared crust. Bake for 1 hour, 15 minutes, until center is almost set ( I bake it longer because I can't stand goopy cheesecake.) Let cool at room temperature. Spread cherry pie filling over top and chill at least 4 hours.
