Ingredients

1 small cabbage
2 tbs olive oil
1 tsp salt
1 yellow onion
1 leek
2 medium carrots
2 medium stalks celery
1 medium potato
5 cups of vegetable broth
1 cup of water (or more)
0.75 cup white beans (dry)
Directions
Soak the beans overnight and then cook only half way.
Cut the cabbage in wedges, no core, then cut again in thin slices. Toss the cabbage with salt and olive oil, then roast in oven at 375F. Roast for 30 minutes or so, using spatula each 10 minutes to move around, to roast each side and so it does not burn. The cabbage needs to turn brown and smell sweet.
Chop the onion and leeks and cook slowly in a large pan with some olive oil and some salt. Cook slowly until slightly yellow-brown.
Clean, peel and cut carrots. Clean and cut potato (don't peel).
In a pot, cook carrots, potato, and the half cooked beans, vegetable broth for 20 minutes (simmer). Add cabbage, onion and leeks and cook for another 20 minutes (simmer).
Adjust salt and pepper to taste.
