Ingredients

    1 1/2 cup flour
    1/2 cup brown sugar, packed
    1 tsp. salt
    1 tsp. baking powder
    1/2 tsp. baking soda
    1 tsp. cinnamon
    1/2 tsp. ginger
    1/2 tsp. nutmeg
    1/4 tsp. cloves
    1/2 cup pecan

    1 cup canned pumpkin
    1 large egg
    1/2 cup lowfat buttermilk
    1/4 cup canola oil

Directions

Makes 24 mini muffins

Stir dry ingredients together in large bowl. In small bowl blend pumpkin, egg, buttermilk, and oil. Make well in dry ingredients and blend in pumpkin mixture until just incorporated.
spoon into mini muffin tins and bake at 400 F 14-15 minutes or until just done and a toothpick comes out clean
