Introduction

My husband loves carrots, but I'm generally not a fan. I do however love soup. Inspired by carrot soup recipes I've seen around the net, I decided to create my own version. We both loved this soup and wish I had made more! I will be making it again soon. My husband loves carrots, but I'm generally not a fan. I do however love soup. Inspired by carrot soup recipes I've seen around the net, I decided to create my own version. We both loved this soup and wish I had made more! I will be making it again soon.
Number of Servings: 4

Ingredients

    8 carrots, chopped
    2 apples, cored & chopped
    1 medium onion, chopped
    1-2 tsp fresh ginger, sliced thin
    1 Tbsp margarine
    1/2 tsp salt
    1/4 tsp white pepper
    1 Tbsp coconut curry powder
    5 cups chicken (or veg) broth
    1 Tbsp sweetener (optional)

Directions

Melt the margarine in a soup pot, then saute the onion, apple, ginger and carrots until the onion is translucent - about 5 minutes. Add the curry powder, salt & pepper, optional sweetener and broth. Bring to a boil, reduce to medium heat and cook for 20 minutes. Use an immersion blender to create a thick consistency or blend in batches.
