Number of Servings: 4

Ingredients

    2 Parsnips peeled and chopped (1" cubes)
    6 Carrots peeled and chopped (1" cubes)
    1 clove of minced garlic
    2 tbsp of butter or margerine
    1/4 cup of nonfat milk
    1 tsp salt to taste
    1 tsp ground black pepper to taste

Directions

Boil parsnips and carrots in water until tender (15-20 minutes).
Drain parsnips and carrots and mash them together (a potato ricer works well for this).
Mix in minced garlic, butter, milk, salt, and pepper.
Place in a bowl and serve warm.


Serving Size: Makes 4 1 cup servings
