Introduction

Low-Cal, Low-Carb, moist and tender! Low-Cal, Low-Carb, moist and tender!
Number of Servings: 12

Ingredients

    1- 3lb boneless pork loin roast
    cooking spray
    1/2 tsp salt
    1/4 tsp pepper
    1 C applesauce
    3 Tbsp honey mustard
    3 sprigs fresh rosemary

Directions

Preheat oven to 350 degrees. Rub pork with salt and pepper. Brown pork on all sides in skillet sprayed with cooking spray. Transfer to rack in shallow roasting pan. In small bowl mix together applesauce and mustard; stir well. Spread applesauce mixture over roast. Lay rosemary sprigs across top. Bake @ 350 uncovered 2 - 2 1/2 hrs or until meat thermometer tests done (inside temp about 160). Let rest 10-15 minutes before slicing.

    This was pretty good. The applesauce on the ends and the part that oozes onto the pan burns pretty quickly. The only change I made is I mixed my own mustard and honey because I didn't have the premixed stuff. DH said he would definitely eat it again. - 10/21/16

    Very Good
    Used a pork tenderloin, didn't sear it just raised the oven temp to 400f and it was moist and delicious! - 11/4/15

    applesauce and mustard mixture is a nice flavor, but too liquid to stay on the roast--needs to be thicker, or make own applesauce would be one possible solution - 5/2/12
