Introduction

Ingredients

    1 4 oz chicken breast
    2 Tbsp. Fat Free ricotta cheese
    1 Tbsp. Eggplant spread
    .5 Tbsp Italian seasonings
    1 tsp. salt
    1/4 tsp. pepper
    2 or 3 pieces of sundried tomatoe
    1 tsp olive oil
    1 cup frozen spinach
    2/3 cup frozen chopped onions
    3 Tbsp. spaghetti sauce

Directions

Cut the chicken breast into 2 pieces and pound each piece so it's about 1/2 inch thick. In a small bowl, mix the ricotta cheese, eggplants spread, italian seasoning, salt and pepper. Take about 1/3 of the mixture and place it on the end of 1 piece of the chicken. Then put a sundried tomatoe on top of the mixture. Roll the chicken up. Put a tooth pick through it so that it stays together. Repeat with the other chicken strip, 1/3 of the ricotta cheese mix and another sundried tomatoe. Spray a nonstick frying pan and heat up the 1 tsp of olive oil. Place the 2 chicken roll-ups in the pan and cover it. While the chicken is cooking, make sure you turn it over a couple of times so that it cooks on all sides. It will cook in about 10 minutes or less, but make sure you watch the pan. While cooking the chicken, mix the 3 Tbsp. of spaghetti sauce with the remaining 1/3 of the ricotta mixture. Take another frying pan and spray it with non-stick spray. Put the frozen spinach and chopped onions in the pan. Cook it until it gets soft. Pour the spaghetti sauce/ricotta cheese mixture over the vegetables and let it cook together. Once the chicken is finished cooking put the spinach mixture on a plate and the chicken roll-ups on top.
