Introduction

Ingredients

    1 small onion, diced
    2 cloves garlic, peeled and chopped
    1 tbsp. olive oil
    1 bell pepper, seeded and diced
    1 ripe red tomato
    1 lb. runner beans, ends trimmed and cut in 2" pieces
    as much or as little as you want of the following spices: cumin, coriander, turmeric, chili powder, salt, pepper
    1 to 1.5 cups water

Directions

Sautee onion and garlic in olive oil, 2 mins.
Add bell pepper, 2 mins. more
Add tomato, green beans and spices 1 min. more
Add water, cover and steam 10 mins.

Serving Size: makes 4 servings
