Introduction
The healthiest pasta you will find anywhere! While you can make this dish sweet, it works just as well with spicy or savory sauces. I love it with mushrooms and alfredo sauce (I know .... naughty)! Ingredients

4 Sweet Potatoes
2 Eggs
1 tsp Salt
1 tsp Nutmeg
3 1/2 cups Flour
Directions
1) Bake or Microwave the sweet potatoes until soft through (if using the microwave, use a "potato bag" for best results).
2) Let the potatoes cool until you can safely touch them, then peel.
3) Mash the sweet potatoes, mixing in eggs, nutmeg, and salt.
4) Slowly add in flour until mixture resembles a soft dough.
5) Flour your hands and cooking surface. Make small (grape sized) dough balls and press gently with a fork.
6) At this stage, you may freeze the gnocchi for use later. If you plan to do this, line a baking sheet with freezer paper and place gnocchi on the sheet (not touching). After a couple of hours in the freezer, they will be hard enough to put into portion sized bags for consumption later and should keep for several months to a year.
7) If you plan to eat the entire batch right away, bring water to boiling. Once boiling, add the gnocchi. When they float to and stay at the surface of the water, they are ready to eat.
8) Cover with the sauce of your choice and enjoy immediately.
