Ingredients

    1kg boneless skinless chicken (breast halves about 6)
    400g diced tomatoes (undrained)
    400g cannellini beans (rinsed and drained)
    1 bell pepper (yellow bell pepper chopped coarsely)
    1.5 tbsp balsamic vinegar
    1 tsp dried oregano
    1 tbsp garlic (minced)
    0.5 tsp dried basil
    0.5 tsp salt
    0.25tsp black pepper
    1 tbsp olive oil

Directions

Place chicken breasts in baking dish.
Combine remaining ingredients and place on top of chicken.
Cover dish and cook at 180c for 1 hour or until chicken is cooked through.
Serve with pasta and salad.
