Introduction

A breakfast sausage that doesn't have soy or gluten fillers--easy to make ahead of time and freeze. Perfect for low-carb/primal/paleo diets. Ingredients

    5 pounds ground pork
    1 cup finely chopped white or yellow onion
    8 cloves garlic, finely minced
    3 tablespoons ground sage
    2 tablespoons rosemary, finely minced
    2.5 tablespoons salt
    1 tablespoon fresh ground black pepper

Directions

Blend all ingredients together until seasonings are well-distributed through the pork. Using a small ice cream scoop, portion out 30 servings and press into patties. For freezing: lay out on cookie sheet with wax or parchment paper, using layers of paper between patties if you need to stack. Cover with plastic wrap and freeze until hard, about 2 hours. Remove from sheet pan and put into ziploc bag.

These can go straight from freezer to pan. Cook on medium heat in a lidded pan, about 6-7 minutes on each side.
