Ingredients

    8 Links Turkey Breakfast Links, chopped into chunks
    1 Med. Onion finely chopped
    1 Med. Red Bell Pepper finely chopped
    1 package frozen Spinach, thawed and squeezed dry
    3 oz shredded Asiago Cheese
    7 Eggs, beaten

Directions

Preheat oven to 350.

Spray a skillet with cooking spray. Saute Onion, Bell Pepper, and Turkey Sausage, until tender and sausage is no longer pink. Add Spinach and let cool. In a large bowl, beat eggs. Add cooled sausage mixture. Add Cheese, and mix well.

Spray a muffin pan with cooking spray. Spoon egg mixture evenly into muffin pan, filling each opening, 3/4 full. Bake at 350 for 20-25 minutes until eggs are set. Serve immediately or let cool and bag for reheating later. To reheat, microwave for 1 minute at 50% power.
