Introduction

This is a low carb low sugar (diabetic friendly) dessert. It's a good way to satisfy a craving for sweets or chocolate without having a lot of sugars. All sugars and carbs in this recipe are naturally present in the cheese.

It is great to eat as is with a spoon. But it could also be a great pie filling for a no bake pie; to keep it low carb make a crust using crushed nuts.

Ingredients

    1 15oz tub Ricotta Cheese
    2 Tbsp Coca Dry powder (for baking)
    1 Tbsp Vanilla Extract (pure)
    1 Tbsp Cinnamon (ground)
    1 tsp Peppermint Extract
    3 packets stevia sweetener

Directions

Mix all ingredients together in the tub the ricotta came packaged in. Can be refrigerated for later use or served immediately.

Serving Size: makes 7 quarter-cup servings
