Ingredients

    .5 cup 7 grain cereal
    2 cups rolled oats
    .75 cup peanut butter
    .5 cup honey
    pinch of salt
    1 cup mixed dried fruit
    2 Tb almonds chopped
    1 Tb cashews, chopped
    .25 cup sesame seeds
    1 Tb ground flax seed meal

Directions

Spread the nuts, rolled oats and sesame seeds onto a sheet pan and toast in the oven at 350 for 8-10 min. or until lightly golden brown. Remove from oven and let cool, then transfer toasted ingredients into a medium size bowl with the dried fruit and flax seed, sed aside, in a saucepot, bring .5 cup of water to a boil, add cereal and remove from heat. Add peanut butter, honey, salt and vanilla to the saucepot and return to low heat. Cook until mixture looks silky and shiny (about 4 minutes). Carefull mix the hot mixture into the dry ingredients, making sure that all the peanut butter mixture is evenly distributed. Press mixture into a greased 8x8 baking dish. Refrigerate bars for 2 hours before cutting.
