Ingredients

Butter, unsalted, 2 tbsp
Egg, fresh, 2 large
Philadelphia Whipped Cream Cheese, 12 tbsp
Baked Potato (baked potatoes), 3 potato sliced thin
Spinach, frozen, 1 package thawed/squeezed dry
*Kraft 2% Shredded Cheddar Cheese, 2 cup
Pie crust, frozen, ready-to-bake, 2 crust, single 9" (remove)
Onions, raw, 1 medium (2-1/2" dia) chopped
Directions
Preheat oven to 400.
In large skillet melt butter and add onion. Saute.
In a large bowl lighly beat eggs, whisk in cream cheese, stir in onion, potato, spinach and 1 cup of cheddar cheese.
Divide among the two pie shells and top with remaining cheese.
Bake for 15 min. Reduce the oven to 350 and bake another 40 min or until knife comes out clean. Let pie stand for 10 min. before slicing.
This is even better the next day!
