Introduction
I took my delicious carrot cake recipe and tried to make it healthier. It didn't come out the same as my regular carrot cake - but everyone liked it! Ingredients

3/4 cup Applesauce - unsweetened
1/2 cup oil
1/2 brown sugar or demarera sugar
Sugar subsitute - equivalent to 1 cup regular sugar
4 eggs
1 cup whole wheat flour
1 cup all purpose white flour
2 teaspoons cinnammon
1 teaspoon baking soda
3 cups grated carrot
1 cup chopped nuts
Optional: 1/2 cup raisons
Directions
1. Mix the oil, sugar, sugar substitute and eggs together.
2. Sieve all dry ingredients into a seperate bowl and then add to the above mixture.
3. Add the carrots, nuts and raisons..
4. Bake in a medium over (180 deg. C) for about 30 to 35 min - until a skewer put thru the middle of the cake comes out dry.
This makes about 20 slices - depending on how small you cut them!!!
