Ingredients

    2 T olive oil
    2 pounds sirloin steak, cut in 1" cbes
    1/2 pound ground chuck
    12 oz chorizo sausage, casing removed
    1 larege onion
    1/2 c chili powder
    1 T garlic salt
    2 t ground cumin
    1 t dried basil
    2 cans chopped tomatoes
    2 cans beef broth
    1 cup chopped fresh cilantro (2 T dried)
    1 cinnaomn stick
    3 bay leaves
    3 jalapeonos, sliced 3 times lengthwise, leaving stem intact
    1 T yellow cornmeal
    Salt & Pepper to taste

    Garnish: Sour cream and grated cheddar cheese

Directions

Place oil in a large pot. Brown sirloin in batches. Remove to bowl with Slotted spoon. Add the ground beef, chorizo, and onion and brown the meat. Return the sirloin to the pot.

Stir the remaining ingredients, except garnished. Bring to a boil. Reduce heat and simmer for 2 hours. Before serving, discard cinnamon stick, jalapeno and bay leaves.

Serve with garnishes.

Can use ground venison or venison steak in place of beef!
