Introduction

These mini meat loaves are the perfect size for toddlers. The onion is very finely chopped, the chili sauce adds some zing, and the ground seitan reduces the amount of fat in the dish. Ingredients

    24 oz seitan, ground
    1/4 cup egg white
    1 small onion, chopped very finely
    1/2 cup chili sauce
    1/2 cup plain dry bread crumbs
    1/2 tsp. chili powder
    1/2 tsp. salt
    pinch of freshly ground black pepper

Directions

preheat oven to 350. Spray 12 muffin cups with nonstick cooking spray. In a large bowl, combine the ground seitan, onion, egg white, chili sauce, bread crumbs, chili powder, salt, and pepper. Use your hands to combine the mixture well. Moisten your hands with cold water. Shape the meat loaf mixture into 12 balls and place each in a muffin cup. Bake for 40 minutes. Serve with a kid friendly vegetable, such as carrots. Ketchup is the sauce of choice for dipping! This recipe is a vegetarian, altered version of a recipe that appeared in American Baby magazine november 2004.
