Ingredients

1/2 cup Sugar Free-Fat Free pudding prepared with skim milk *
2 TBSP graham cracker crumbs
1 stp Butter, unsalted
3 tsp Splenda (reserve 2 tsp)
4 Strawberries, frozen, unsweetened
dash of sea salt
Directions
* I made up a batch of 1 package White Chocolate & 1 package Vanilla sugar free/fat free pudding with skim milk (per package directions, and used 1/2 cup of that. I imagine this would be equally as tasty made with cheesecake, chocolate or any other flavor of pudding. You could even use a store bought pudding cup.
Melt butter in a small ramekin (ceramic tart pan?), then add graham cracker crumbs, 1 tsp of Splenda and mix together, then press flat into the bottom of the ramekin and broil in toaster oven at 450 degrees for 5 min or until slightly browned. While that's browning, in another small dish (another ramekin, a coffee cup, small measuring cup?) put berries & the remaining 2 tsp of Splenda into the microwave and cook on high for about 30 seconds. The strawberries will turn to mush. That's what you want. Stir them up with a fork to break them up more and nuke more if needed. Set both aside to cool for 5-10 min. Poor pudding into graham cracker shell, top with berries & enjoy!
