Introduction

Ingredients

    * Granulated Sugar, 180 grams
    * Butter, unsalted, 125 grams
    * Egg, fresh, 4 medium
    * Cream Cheese, Fat Free, 1000 grams
    * Corn Starch, 0.2 cup
    * Baking Powder, 1 tsp
    * Saffron, 0.5 tsp
    * Lemon Juice, 1 lemon yields
    * Lemon Peel, 1 tsp
    * Raisins, 100 grams
    * Vanilla Extract, 1 tsp

Directions

Preheat oven to 350°. If your butter comes from the fridge, warm it in the heating oven for a few minutes. Separate eggs, beat the whites until it keeps shape. Beat sugar, egg yolks and softened butter, add corn starch, baking powder, vanilla extract, saffron, lemon juice and peel. When mixture is smooth add the cream cheese and raisins, after everything is well combined fold in the egg whites. Pour into greased baking pan and bake approximately one hour. If the cake turns too dark for your taste, cover it for the last 15 minutes. Let cool in the pan before cutting.

There are a lot of possible variations for this cake. My version is quite sweet, you can experiment with less sugar, or you can leave out the raisins if you don't like them. The saffron is mainly for optical qualities, if you can't get any, leave it out. The last version I did i replaced the lemon juice and peel with lime - very tasty, too.

The calorie calculation is for 12 pieces, but you can make it 16 if you only want small slices.
