Introduction

Number of Servings: 8

Ingredients

    1 lb. Turkey breast, diced or in pieces
    3 ea. 14 oz. cans Swanson's 99% Fat Free Chicken Broth
    2 cups water
    4 oz. Wild Rice
    1 cup onion, diced
    1 cup celery, diced
    1 cup carrots, diced
    8 oz. frozen corn
    8 oz. frozen peas
    6 oz. V-8 juice
    1 bay leaf
    1/4 t. white pepper
    Garlic and/or garlic salt to taste

Directions

Combine all ingredients in the crockpot, except for the peas and V-8. Cover and cook on low for 7-1/2 hours. Add the peas and V-8 and cook for another 30 - 60 minutes. Once the rice and vegetables are tender, the soup is ready!

Makes 8 servings of 1-1/2 cup each.

    Incredible!
    This was a wonderful recipe. I tweaked it with some of my favorite spices and used brown rice instead of wild rice. Everyone loved it and my kids didn't complain when we had it again the next night. - 12/7/10

    This was delicious. I used turkey stock made from our T-giving turkey in place of the canned broth, and crushed tomatoes instead of the v8 juice. I will definitely make this again! - 12/16/08
