Introduction

Ingredients

    2 cups acorn squash, peeled and cubed
    2 cups potatoes, peeled and cubed
    2 cups carrots, chopped
    1 cup celery, raw, choped
    1 cups onions, chopped
    2 cloves garlic, chopped
    2 cups Chicken stock, home-prepared
    4 qts water
    2 tbsp dried Parsley
    1 tsp Mrs. Dash (R) Garlic & Herb Seasoning Blend
    1 tsp Badia Herbes de Provence
    2 whole Bay Leaves
    4 cups fresh spinach, chopped

Directions

Prep all the veggies. Combine everything except the spinach in a large stock pot or dutch oven. Add the seasonings of your choosing to taste. Bring to a boil over high heat, then reduce by half and simmer for about 1 hour. Add spinach and cook until tender.
