Ingredients

2 tbsp EVOO
2 boneless skinless chicken breasts, cubed
1 cup onion, diced
3 tsp (1 tbsp) garlic, minced
1 8oz can tomato sauce (very important: NOT tomato paste)
1 cup cream
1 lb (1 box) spaghetti, or other noodle of your choice
1 bunch asparagus in 2" sections
2 tbsp basil, cut in chiffonade
salt and pepper to taste
Directions
add 1 tbsp EVOO to non stick pan
brown chicken untill cooked through, set chicken aside
put pasta pot on high eat and bring to boil.
add additional 1tbsp EVOO to the pan used to cook chicken and saute onion for 8 minutes.
add garlic and saute for 1 min.
add tomato sauce and bring to simmer.
your water should be boiling now, so add pasta.
lower heat on the the pan and add cream. bring to simmer, add chicken back in and season with salt and pepper to taste.
during last two minutes of cooking pasta, add asparagus to pasta pot.
when done, drain, reserving 1 cup pasta water, and return to pot.
add sauce to pasta and asparagus, top with basil and mix.
Serving Size: makes 6 dinner portions or 8 side dish portions
