Ingredients

1 c. butter or margarine
1 1/2 c. sugar
2 large eggs
2 3/4 c. flour
2 t. cream of tartar
1 t. baking soda
1/4 t. salt
3 T. sugar
3 t. cinnamon
Directions
Preheat oven to 350 degrees.
Cream together butter, sugar and eggs. If desired, add 1 t. vanilla extract. In a separate bowl, combine flour, cream of tartar, baking soda and salt. Add flour mixture to the butter mixture, blending thoroughly to combine.
Refrigerate dough for at least 15 minutes or until stiff enough to handle easily. In a small bowl, combine remaining sugar and cinnamon.
Shape dough into small balls, about the size of a large gumball. Roll in cinnamon sugar mixture until completely covered. Cover a baking sheet with parchment paper and arrange dough balls about an inch apart.
Bake at 350 degrees for 10 minutes. Remove from baking sheet immediately.
Makes about 57 cookies.
