Ingredients

    1/2 cup quaker oats dry
    1/2 cup lowfat buttermilk
    1 1/2 cups whole wheat pastry flour
    1 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp cinnamon
    1/4 tsp salt
    1 medium orange
    1/4 cup granulated sugar
    1/4 cup honey
    3/4 cup flaxseed meal
    1 medium egg
    1 cup blueberries, frozen
    1/2 cup dried cranberries
    nonstick cooking spray

Directions

Preheat oven to 400 degrees. Coat 12 cup muffin tin with cooking spray. Stir together oats and buttermilk in small bowl and set aside for 5 minutes. Whisk dry ingredients in medium bowl. Grate rind from orange and add to large bowl. Squeeze 1/2 cup orange juice and add to rind. Whisk in sugar, honey, flaxseed meal, and egg until smooth. Blend in oatmeal mixture then flour mixture until just blended. Fold in berries. Bake for 15 minutes.

    Incredible!
    I did not not use the honey, flax meal or the egg ( 4oz unsweetened applesauce in place of the egg). Lowered cal 140, 1 g fat. These muffins are delicious, sweet but not too with just a hint or orange, and the berries are oh so yummy. Great for desert, snack, or breakfast on the run. - 9/26/10
