    3 lbs skinless,boneless chicken breast, cooked and cubed
    2 cans 98% fat free cream of mushroom soup
    2 cans 98% fat free cream of chicken soup
    1 can tomatoes w/ green chilies
    1 green pepper, chopped
    6 1/2 oz. Tostitos, scoops, baked
    2 c. shredded fat free or reduced cheddar cheese


Preheat oven to 300. Saute green pepper and onion in non-stick skillet sprayed with cooking spray. Mix sauteed green pepper and onions with both soups, tomatoes and cubed chicken in a 13 x 9 casserole dish. Layer mixture alternately with tortilla chips and cheese (make sure cheese is not on top - it melts better) Bake for 40-45 minutes.

    Good stuff! The only thing I used flour tortilla's, velbeeta and fresh pico di gallo because that is what I had on hand. - 1/18/09
