Ingredients

1 T. bacon drippings
1 onion
2 ribs celery
4 carrots, 1 finely diced, 3 thickly sliced
6 tsp. chicken-flavored better-than-bullion mix
12 c. water
1-1/4 lb. boneless chicken thighs, diced
1/2 lb. fresh egg noodles
Tips
Fresh noodles cook very fast...if using dried noodles, add them after adding the carrot slices instead of at the very end.
Directions
Heat drippings over medium heat. Add onions, celery, & finely diced carrot. Cook till all are soft, 8-10 minutes, but be careful not to let them brown.
Dissolve bullion mix in water, then add to vegetables in pot, scraping to loosen any bits stuck to the bottom. Cook at a low simmer for 15-20 minutes, till vegetables begin to break up. Puree if desired at this point (will give you a thicker broth).
Add carrot slices and cook at a simmer for 10 minutes, then add chicken bits and cook for 5 more minutes. Finally, stir in noodles and cook a minute or so more, till noodles are tender.
Serve.
