Light Chicken salad served on a bed of Romaine lettuce with onions tomatoes and sweet peppers. Great meal to prepare the night before with leftover baked chicken. Ingredients

14.5 oz of Shredded Chicken (canned or left over)
1/2 cup of LIGHT mayo
1/2 cup of red onion
1/2 cup of red peppers
2 tbls of tarragon
pinch of salt and pepper
4 leaves of romaine lettuce
red onion
red peppers
cherry tomatoes
4 tbls of brown spicy mustard
3-4 tlbs of red wine vinegar
1 tbls of olive oil
Directions
mix together the chicken, mayo, onions, red peppers, tarragon, salt and pepper.
Get out 2 bowls (or to go containers)
Use 2 leaves of lettuce in each bowl
put some onion and peppers and cherry tomatoes
Serve the chicken on top of the salad.
To Make the Dressing:
mix together the mustard and ad red wine vinegar to your taste. Ad 1 tbls of olive oil
Only spread about 2 Tbls of the dressing on the salad, even that may be too strong.
Serving Size: 2
Get out 2 bowls (or to go containers)
