Ingredients

1 cup peanut butter
1 winter squash, cut into cubes
1 large can tomatoes
1 bunch cilantro
1 cup peanut butter
1 medium onion
1.5 cups garlic
.5 cups olive oil
.5 block of tofu
Salt
Pepper
Crushed red pepper (optional)
Ginger
Directions
1. Heat olive oil and cook garlic, onions, squash, tofu, and pepper until squash is tender enough to be pierced with a fork.
2. Add tomatoes and salt and stew for roughly five minutes.
3. Add peanut butter and mix in well. Cook for about ten minutes or until stew thickens.
4. Add cilantro and mix well.
5. Serve by itself or over rice or shredded chicken.
This recipe is gluten-free, fairly low-carb, and vegan. Take that!
