Introduction

this recipe is on the back of Red Mill's Flax Seed Meal. I decreased the sugar by 1/2. Ingredients

    1 1/2 C. flour (whole wheat or white)
    3/4 C. ground flax meal
    3/4 C. oats (instead of oat bran)
    1/2 C. brown sugar (not packed)
    2 tsp baking soda
    1 tsp baking powder
    1 tsp cinnamon
    1 C. raisins
    1 C. shredded carrots
    1 apple skinned and shredded
    1/3 C. chopped walnuts
    2 Eggs
    1 tsp vanilla extract
    3/4 C. milk (whole)

Directions

combine all dry ingredients.
fold in shredded carrots/apples
combine all wet ingredients and add to dry/fruit mixture.
put in prepared muffin pans (lightly sprayed with cooking oil), and back at 350 for 15-20 mins. Mine are usually done by 18 min. Use a knife to poke the middle of the muffin - if it comes out clean the muffins are done.

Serving Size: makes 12 medium sized muffins
