Ingredients

    Flour Tortillas, 1 tortilla (approx 12" dia)
    Spinach, fresh, 15 leaf
    *zuchinni, .25 cup
    Green Peppers (bell peppers), 2 tbsp
    Onions, raw, 1.5 tbsp chopped
    *Green Chili Peppers, canned, .125 cup
    Monterey Cheese, .5 cup, diced
    Cilantro, raw, 2 tbsp
    *** measurements may not be exact, adjust to your liking.

Tips

I get this at work where they have a big flat top grill with makes it much easier (no pans to clean) to cook.


Directions

place flour tortilla in dry pan over med heat, sprinkle with cheese. In a seperate pan add all the veggies and cook to desired doneness. I like veggies a little on the crisp side. add veggies to one half of the tortilla and fold other half over. Remove it from the pan when the tortilla is slightly crisp.

Serving Size: cut folded qesadilla into 4 segments
