Ingredients

    8 oz Sweet Italian ground sausage, crumbled
    1/2 10 oz. pkg. of fresh spinach
    1 Bell pepper, diced (any color)
    3 Shallots, sliced
    4 eggs
    3/4 c. shredded Parmesan cheese
    1/2 tsp. dried garlic
    1/2 tsp. basil
    1/2 c. grated Mozzarella cheese
    Salt and pepper

Directions

Brown sausage and Add spinach,bell pepper , and onions (saute). Preheat oven at 350 degrees. Butter 9x9 baking dish. Combine eggs, 1/2 cup Parmesan, garlic, and seasonings in medium bowl. Mix well. Stir in sausage and vegetables. Pour in 9X9 baking dish. Sprinkle with rest of cheese. Bake until set, 25 minutes. If chilled, bake 30 to 40 minutes. Can be made the night before and refrigerate. For a large group, double recipe.
