Ingredients

    1/3 cup butter or margarine
    1/2 cup chopped pecans
    3 lbs. (48 oz.,) fresh spinach
    4 tsp. low sodium soy sauce
    Salt and freshly ground black pepper to taste

Directions

Saute the pecans in melted butter until crispy. Set aside. Wash and drain spinach, remove stems and tear into bite sized pieces. Put wet spinach into a saucepan and cook, covered, over low heat for 4 minutes only. Drain, if necessary. Stir together the pecans and soy sauce. Toss into spinach. Add salt and pepper to taste. Makes 8 servings.
