Ingredients

3 1/4 cups sifted flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon ginger
1/2 teaspoon cinnamon
1/4 teaspoon allspice
1 cup butter, margarine, or shortening
1 cup packed light brown sugar
1/2 to 3/4 cup molasses
1 large egg
Tips
Be liberal with the spices, add heaping spoon fulls!
Directions
Sift flour with soda, salt and spices
Cream butter and sugar until very light and fluffy
Work dry ingredients in alternately with molasses beginning and ending with dry ingredients
Divide dough in half and shape into 2 rolls about 2" in diameter
Wrap and chill several hours until firm
Preheat oven to 350 degrees. Slice rolls into 1/8" thick
Dredge cookies through sugar
Space cookies about 1 1/2" apart on an ungreased baking sheet
Bake cookies 8-10 minutes until just firm to the touch
Let cool about 1 minute on baking sheets before transferring to wire racks to cool
About 60 calories per cookie
