Ingredients

    1 C. rolled oats
    2 C. 1% milk
    1 T. butter
    Seeds from 3 cardamom pods, ground

Directions

In a saucepan, melt butter over medium heat. Crack open three fresh green cardamom pods, remove seeds, and grind seeds in a mortar and pestle. Saute ground seeds in the butter until fragrant and golden, about 1 minute. Raise heat to high, add oats, and toast oats in butter/spice mixture until hot but not burning, about 3 minutes, stirring constantly. Add milk, and bring to a rolling boil, stirring often, about 5 minutes. Reduce heat to low, cover, and cook slowly till done, about 25 minutes. Serve with milk and brown sugar. Serves 3.
