Introduction

HOT salsa but can be adapted for milder palates. Good in scrambled eggs, added to mashed avocado to make guacamole, as a dip and as a fat free dressing on salad greens. Ingredients

    6 cloves garlic
    1 medium onion
    1 long,green hot chili pepper
    1 large Jalepeno pepper
    1/2 large green bell pepper (or 1 medium)
    1 medium fresh Poblano chili
    3 large ripe tomatoes
    1/2 teaspoon ground cumin
    1 tablespoon dried cilantro, or 1/4 cup fresh, chopped

Tips

The food processor is fast, but the texture and appearance is much nicer if all ingredients are hand chopped, especially if serving guests. This is very hot!. If you want a mil version, substitute Poblano, Anaheim or bell bell for the Jalepeno and long green hot peppers. Fresh cilantro is best, add to suit your taste.


Directions

Process garlic in food processor until finely minced. Roughly chop onion and all 4 peppers, add to food processor and pulse to a small dice. Empty contents into an 8-cup bowl. Cut tomatoes into 1 inch cubes, add to processor and pulse briefly for a medium dice. Add to pepper mixture in the bowl and stir. Add cumin and cilantro, mix well.

Serving Size: Makes 14 servings, approx 1/2 cup each
