I made the rice earlier in the day for this, but you could use left over rice

Number of Servings: 4

Ingredients

    1.5 cups white rice (cook ahead in a rice cooker)
    2 tsp peanut oil
    99 grams onions (chopped)
    1 large egg
    97 grams carrots (chopped)
    20 grams (2 stalks) scallion (finely chopped)
    2 tsp oyster sauce
    2 tsp mushroom soy sauce
    2 Tbsp water

Directions

cook rice ahead of time and let cool

mix soy sauce, oyster sauce, water in a separate bowl
scramble egg in a separate bowl

heat oil in wok
saute onion and carrot
add in rice
pour in sauce mixture
create a well in the center and slowly pour in egg
stir everything together to coat with sauce

garnish with scallion
