Ingredients

    6 cups (3 cans) chickpeas OR 1/4-lb dried chickpeas
    1 cup chopped onion
    1/2 cup chopped celery (or add more onion)
    1 28-oz can diced tomato in their own juices (reduced sodium, if possible)
    2 tsp ginger
    2 tsp tumeric
    1 tsp black pepper
    1 tsp cinnamon
    1/2 tsp nutmeg
    1/4-lb (about 2/3cup) dried green lentils
    1/2 cup dry brown rice
    4 cups vegetable stock/broth
    1/2 cup chopped fresh cilantro



Tips

Add a spritz of lemon juice and cilantro as garnish.


Directions

If using dried chickpeas, cover with water and let hydrate for 8 hours. Chop onion and celery. Add all ingredients to large stockpot and simmer for 45 minutes to 1 hour.
