Ingredients

8 oz package shirataki noodles(drained and rinsed), cut into 5-8 inch length
1/2 lb boneless, skinless chicken breast, cut into small bite size
1 egg yolk
2 oz bacon, cut into small pieces
1/4 C heavy cream
1/4 C grated parmesan cheese
1 Tbsp parsley, chopped
2Tbsp olive oil
salt and black pepperl
Tips
Add fresh sliced mushrooms and petite peas to round this dish out (not included in nutritional information). Serve with a green salad.
Directions
1. Place prepared shirataki noodles into a non-stick skillet and fry over medium heat for about 1 minute or until excess water has evaporated. Set aside.
2. In a bowl, mix egg yolk and heavy cream until well blended. Add parmesan cheese and mix well.
3. Cook bacon until crispy. Place the cooked bacon on a paper towel to soak up the excess oil.
4. Add olive oil into the skillet and cook chicken over medium heat. Cook well.
5. Return shirataki noodles and bacon into the skillet.
6. Add the mixture from #2. Cook for less than 1 minute.
7. Add salt and black pepper.
8. Sprinkle parsley over the noodles. Enjoy!
