Introduction

Number of Servings: 15

Ingredients

    1/3 cup softened butter or margarine
    1 1/3 cups granulated sugar (I only use 1 cup)
    2 large eggs
    1/3 cup water
    1 medium-sized orange

    2 cups all-purpose flour (I use the whole wheat pastry flour)
    1 tsp baking soda
    1/2 tsp baking powder
    3/4 tsp salt
    1 tsp cinnamon
    1/2 tsp ground cloves
    1/2 cup chopped walnuts
    1 cup (or less) dark chocolate chips

Tips

Original recipe called for raisins or dates instead of choc. chips.


Directions

Cut up whole orange (remove seeds) and place in a blender. Add water and eggs. Pulse until completely chopped / blended. Add pumpkin and blend further.
In a bowl, cream together butter and sugar. Combine ingredients in blender w/ butter & sugar.
Combine next 8 (dry) ingredients in a separate bowl. Stir into wet batter and mix well.

Pour into greased pan(s) or muffin tins (I used paper liners for muffins).

Preheat oven to 350 degrees.
Bake for 50 min then test w/ toothpick. May need up to 10 min longer (again, does depend on size of pan... or if making muffins, check after 20 min).

Let stand for 10 min in pan before removing. Cool and wrap.

Serving Size: Makes 1-2 loaves of bread, depending on size of pan.
