Introduction

Great way to use leftover holiday turkey! Great way to use leftover holiday turkey!
Number of Servings: 12

Ingredients

    1 Tbs olive oil
    1 large onion, chopped
    1 (4 oz) can diced green chiles, drained
    1 tsp chili powder
    1 tsp ground cumin
    1 large garlic clove, minced
    1/2 tsp dried oregano
    1/8 tsp cayenne pepper
    6 cups turkey stock
    1 (16 oz) can tomatoes, broken
    12 oz turkey
    1 can fresh corn
    1 can black beans
    (cilantro, monterey jack cheese, tortilla chips for additions, as desired)

Directions

(Make turkey stock ahead of time with carcus of holiday turkey. Boil with carrots, onions, celery, bay leaf. Strain and defat.)

To make the soup, saute onion in olive until limp. Add chiles, chili, garlic and spices. Stir, one minute, until aromatic.

Add turkey stock and tomatoes. Bring to a boil.

Add turkey slices and simmer 3 minutes.

Add corn & beans and simmer 1 minute more, until well-warmed. Add salt and pepper to taste.

Serve over tortilla chips. Top with monterey jack cheese and chopped cilantro.

Makes approximately 12 1-cup servings.
