Introduction

Ingredients

3 cups fresh Spinach leaves (pre-washed is helpful) :)
2 cups fresh Broccoli Rabe
2 Egg Whites
1 cup Nonfat Ricotta Cheese
1 mixing bowl
1 loaf pan (or baking dish)
Tips
High in calcium! High in fiber! High in protein! And iron too! YUMMM!!!
Directions
Wash the broccoli rabe and rip the stems and leaves into pieces. Wash the spinach if not pre-washed. Add the broccoli rabe to boiling water and cook for 2 minutes. Add fresh spinach after the timer beeps and set it for 1 minute. Remove the cooked greens from the water and place into a bowl with a dozen ice cubes and a small amount of water to stop the cooking. Then squeeze dry with a paper towel.
In a large bowl, mix cooked greens, one cup of fat free ricotta cheese and 2 egg whites. (I used my hands) :)
Flatten mixture in a loaf pan and bake at 350 degrees F for 25 minutes. Cool for 3-5 minutes before serving. Yummy greens, protein and fiber!
Serving Size: 1 loaf pan makes 2-3 servings
