Ingredients

    1 (16oz) package green split peas
    2 cups diced cooked ham
    3 carrots
    1/2 cup diced onion
    2 ribs celery with leaves
    2 cloves fresh garlic, minced
    1 bay leaf
    15 sprigs parsley
    1 tbsp salt
    .5 tsp pepper
    1.5 quarts water


Tips

I would cut back on the salt, perhaps none additional and use organic "better than broth" veggie broth


Directions

Prepare ingredients by slicing carrots and celery, chop parsley
Layer ingredients in slow cooker in order listed. Do not stir to mix. Pour water gently over layers. Cover and cook on high 4-5 hours or low 8-10 hours, until peas are soft. Remove bay leaf, mash peas to thicken or stir to blend soup . Serve as is or with croutons.

    I've made this recipe many times and it's always a family hit. I love the simplicity of crock pot cooking, and this soup always turns out perfect. We like to use an immersion blender to smooth it out a little, but still leave some of the peas intact. - 12/1/13
