Number of Servings: 2

Ingredients

    1 tbsp Olive Oil
    1 clove Minced Garlic
    1 Chicken Breast, chopped in small pieces
    1 tsp Ground Cumin (or to taste)
    2 tsp Chili Powder (or to taste)
    1 tsp salt (or to taste)
    Cracked Black Pepper to tast
    1/2 tsp Unsweetended Cocoa
    1/4 cup Coca Cola Classic
    1 16 oz can Black Beans
    14.5 oz can Diced Tomatoes
    2 cups Fresh Baby Spinich
    2 tsp flour mixed in 1/8 cup water


Directions

Heat oil over medium heat in saucepan. Saute minced garlic. Add chicken pieces and saute until cooked. Add all spices, uncluding Coca Cola, and stir into the chicken. Add diced tomatoes and black beans, including liquid. Mix. Raise temperature to Medium high, cook until boiling (stirring often). Once boiling, add spinich and flour/water mix. Mix well, then reduce heat to low. Simmer for 15-20 minutes, then serve hot.

Serving Size: Makes two servings.
